  • 20 large white or cremini mushrooms, stems removed and chopped
  • 1 tablespoon olive oil
  • 1 small apple, finely diced
  • 1 small onion or shallot, finely diced
  • 2 garlic cloves, minced
  • ½ teaspoon thyme (fresh or dried)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup sharp cheddar cheese, shredded
  • ¼ cup breadcrumbs (panko or regular)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
  2. Clean mushrooms and remove stems. Finely chop stems and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté chopped mushroom stems, onion, and garlic until softened, about 3–4 minutes. Add diced apple, thyme, salt, and pepper. Cook for another 2–3 minutes until apples are tender.
  4. Remove from heat and stir in cheddar cheese and breadcrumbs until well combined.
  5. Spoon filling into mushroom caps and place on prepared baking sheet.
  6. Bake for 18–20 minutes, until mushrooms are tender and tops are golden.
  7. Garnish with parsley and serve warm.
