Ingredients
For the Waffles:
2 cups all-purpose flour
2 tbsp granulated sugar
1 tbsp baking powder
½ tsp salt
1 ½ tsp cinnamon
1 ½ cups apple cider
2 eggs
¼ cup melted butter (plus more for greasing)
1 tsp vanilla extract
For the Cinnamon Sugar:
½ cup granulated sugar
2 tsp cinnamon
For the Whipped Maple Cream:
1 cup heavy cream, chilled
2 tbsp pure maple syrup
½ tsp vanilla extract
Instructions
Preheat waffle iron and grease it lightly.
In a bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
In another bowl, mix apple cider, eggs, melted butter, and vanilla. Combine wet and dry until just mixed.
Cook waffles in the waffle iron until golden and crisp.
While hot, brush waffles lightly with butter and roll in cinnamon sugar.
For the maple cream: beat heavy cream until soft peaks form, then add maple syrup and vanilla. Beat until fluffy.
Serve warm waffles with a generous dollop of maple whipped cream.
