Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease well.

- In a blender or food processor, blend cottage cheese, eggs, oil, and vanilla until smooth.

- Divide batter evenly among muffin cups, filling about ¾ full.
- Bake for 20–24 minutes, or until golden and a toothpick inserted into the center comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
