Ingredients
1 cup cottage cheese
1 cup rolled oats
1 cup fresh blueberries
2 large eggs
¼ cup honey or maple syrup
1 tsp cinnamon
1 tsp vanilla extract
1 tsp baking powder (optional, for a fluffier texture)
Instructions
Preheat Oven: Set to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
Mix Wet Ingredients: In a bowl, whisk together cottage cheese, eggs, honey or maple syrup, and vanilla.
Add Dry Ingredients: Stir in oats, cinnamon, and baking powder. Fold in blueberries.
Bake: Pour mixture into the baking dish and smooth out evenly. Bake for 35–40 minutes, until the center is set and edges are golden.
Cool & Serve: Let cool slightly. Enjoy warm or cold!
