Ingredients
Makes 16 servings (2 casseroles or one 9×13-inch deep dish)
2 cans crescent roll dough
2 pounds mild breakfast sausage (or mix mild + spicy)
12 large eggs, beaten
4 cups shredded cheddar cheese
Optional Add-ins:
1 small red bell pepper, diced
½ small onion, diced
1 tsp hot sauce or ½ tsp red pepper flakes
½ tsp garlic powder
½ tsp black pepper
½ cup shredded pepper jack or mozzarella for topping
Chopped green onions or parsley for garnish
Instructions
Preheat oven to 375°F (190°C). Grease two 8×8 pans or one 9×13-inch deep dish.
In a skillet over medium heat, cook sausage, breaking it up as it browns. Add onion and pepper (if using) and sauté until softened. Drain excess grease.
Unroll crescent dough and press into the bottom of each baking dish to form a crust.
In a bowl, whisk eggs with hot sauce, garlic powder, and black pepper (if using).
Layer sausage mixture evenly over the dough, followed by the egg mixture.
Sprinkle cheddar cheese over the top. Add extra cheese or topping, if desired.
Bake for 30–35 minutes, or until eggs are set and top is golden brown.
Cool slightly before slicing. Garnish with green onions or herbs if desired.
