Ingredients
1 tbsp olive oil
3 chicken breasts, cubed
Salt and pepper, to taste
4 garlic cloves, minced
2½ cups chicken broth (600 mL)
2½ cups heavy cream (600 mL)
½ lb penne pasta (200 g), uncooked
2 cups grated parmesan cheese (220 g)
2 cups shredded mozzarella cheese (200 g)
1 handful fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 375°F (190°C).
In a large oven-safe skillet or pot, heat olive oil over medium heat. Sauté chicken with salt and pepper until browned.
Add garlic and stir until fragrant (about 1 minute).
Pour in chicken broth and heavy cream. Bring to a simmer.
Stir in uncooked pasta. Simmer for 8–10 minutes, stirring often, until pasta starts to soften.
Remove from heat. Mix in parmesan cheese until melted. Top with mozzarella.
Bake uncovered for 15–20 minutes, until bubbly and golden.
Garnish with fresh parsley and serve hot.
