Ingredients
1 pound ground beef
1 onion, diced
2 cloves garlic, minced
1 cup long-grain white rice, uncooked
2 cups beef broth
1 can (14.5 oz) diced tomatoes, drained
1 tsp Italian seasoning
Salt and pepper to taste
2 cups shredded cheddar cheese
½ cup sour cream
Instructions
Preheat oven to 375°F (190°C).
In a large oven-safe skillet or pan, brown the ground beef over medium heat. Drain excess fat.
Add onion and garlic; cook until soft and fragrant.
Stir in uncooked rice, beef broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a simmer.
Cover and bake for 30–35 minutes, or until the rice is tender and liquid is absorbed.
Stir in sour cream, sprinkle cheese evenly over the top, and bake uncovered for an additional 10 minutes until bubbly and golden.
