Ingredients
2 cups cooked chicken, diced
1 cup cooked quinoa
1 cup bell peppers, diced (any color)
½ cup cucumber, diced
¼ cup red onion, finely chopped
¼ cup parsley, chopped
¼ cup olive oil
2 tbsp lemon juice
Salt and pepper to taste
Instructions
