This scaled-up Chipotle Burrito Bowl is perfect for feeding a hungry group with all the layers you love—grilled chicken, cilantro lime rice, black beans, fresh salsas, cheese, guac, and more. It’s a crowd-pleasing DIY bowl bar that delivers on taste and nutrition.

 


Ingredients

Main Bowl Components:

• 2 recipes Chipotle Chicken (grilled and sliced)

• 4 cups Cilantro Lime Rice

• 2 recipes Easy Corn Salsa

• 2 (15 oz) cans black beans, lightly drained

• 8 cups shredded romaine lettuce

• 2 cups shredded Monterey Jack cheese

• 2 recipes Chipotle Guacamole

• 1 cup sour cream (for garnish)

• 2 limes, cut into wedges

Fresh Tomato Salsa:

• 4–6 medium tomatoes (2–3 lbs), diced into ¼-inch pieces

• ½ cup finely chopped red onion

• ½ cup finely chopped fresh cilantro

• 6 jalapeños, finely chopped (seeded for less heat)

• 2 tbsp fresh lemon juice

• 2 tbsp fresh lime juice

• Salt to taste


Instructions

Prepare Tomato Salsa: Mix tomatoes, onion, cilantro, jalapeños, lemon juice, lime juice, and salt. Let sit for 20–30 minutes.

 

Layer the Bowls: In large bowls (or let guests build their own), layer rice, black beans, Chipotle Chicken, and corn salsa.

 

Top with tomato salsa, guac, romaine, cheese, and sour cream.

 

Add lime wedges on the side for an extra kick.
