Ingredients

  • 1 cup dried cherries
  • 1 cup raw almonds
  • 1/2 cup rolled oats
  • 2 tbsp honey (or maple syrup for vegan)
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Add almonds and oats to a food processor and pulse until finely chopped.
  2. Add dried cherries, cinnamon, nutmeg, ginger, vanilla, and salt. Blend until mixture begins to stick together.
  3. Pour in honey (or maple syrup) and blend again until fully combined into a sticky dough.
  4. Roll mixture into small bite-sized balls using your hands.
  5. Place on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the fridge for up to 1 week.
