Ingredients
1 cup cottage cheese (blended until smooth)
¼ cup honey or maple syrup
1 egg
1 tsp vanilla extract
1½ cups oat flour
½ tsp baking soda
½ tsp cinnamon
¼ tsp salt
½ cup chocolate chips (or swap for chopped nuts, raisins, or dried cranberries)
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, mix blended cottage cheese, honey, egg, and vanilla until smooth.
Add oat flour, baking soda, cinnamon, and salt. Stir until a dough forms.
Fold in chocolate chips.
Scoop dough into small balls and flatten gently on the baking sheet.
Bake for 10–12 minutes, or until edges are golden.
