  • 810 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

Instructions

  1. Brown the Meat: In a skillet over medium heat, cook ground beef (or sausage) with onion until browned. Stir in garlic and cook 1 more minute. Drain excess fat.
  2. Transfer to Slow Cooker: Add cooked meat mixture to crockpot along with crushed tomatoes, tomato sauce, diced tomatoes, broth, Italian seasoning, basil, red pepper flakes, salt, and black pepper. Stir to combine.
  3. Slow Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours.
  4. Add Pasta: About 30 minutes before serving, stir in broken lasagna noodles. Cover and cook until noodles are tender.
  5. Prepare Cheese Topping: In a small bowl, mix ricotta, mozzarella, and Parmesan.
  6. Serve: Ladle soup into bowls, top with a dollop of cheese mixture, and garnish with fresh basil or parsley.
