  • 1 red bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 2 cups shredded cheddar or mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream (or sour cream)
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until fragrant.
  3. Add ground beef and cook until browned. Season with Italian seasoning, paprika, salt, and pepper.
  4. Stir in broccoli, carrots, zucchini, bell pepper, and diced tomatoes. Cook for 5–6 minutes until vegetables begin to soften.
  5. Mix in heavy cream (or sour cream) and half the shredded cheese until combined.
  6. Transfer mixture to the prepared casserole dish. Top with remaining shredded cheese and Parmesan.
  7. Bake uncovered for 25–30 minutes, until bubbly and golden on top.
  8. Let cool slightly before serving.
