Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease well.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, sugar, and orange zest.
- In a blender or food processor, blend cottage cheese, eggs, oil, orange juice, and vanilla until smooth.
- Pour wet mixture into dry ingredients and gently fold until just combined.
- Fold in cranberries.
- Divide batter evenly among muffin cups, filling about ¾ full.
- Bake for 18–22 minutes, or until golden and a toothpick comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
