Juicy chicken thighs swim in a rich garlic cream sauce with sun-dried tomatoes, spinach, and melty parmesan. Ingredients
6 boneless, skinless chicken thighs
1 tbsp olive oil
3 cloves garlic, minced
½ cup sun-dried tomatoes (in oil, drained and chopped)
1½ cups heavy cream
½ cup grated parmesan cheese
2 cups baby spinach
Salt, pepper, and Italian seasoning to taste
Instructions
Season chicken thighs with salt, pepper, and Italian seasoning.
Sear in olive oil over medium-high heat until golden and cooked through. Remove and set aside.
In the same pan, sauté garlic and sun-dried tomatoes for 1–2 minutes.
Stir in cream and parmesan. Simmer until thickened.
Add spinach and cooked chicken, simmer 2–3 more minutes.
Serve hot over zoodles or roasted green beans.
