Ingredients
6 large eggs
1 cup mushrooms, finely chopped
2 oz goat cheese, crumbled
¼ cup green onions or chives, chopped
Salt & pepper to taste
Olive oil or spray for muffin tin
Instructions
Preheat oven to 375°F (190°C) and grease a muffin tin.
Sauté mushrooms in a skillet with a splash of oil until tender, about 5 minutes. Let cool slightly.
In a bowl, whisk eggs with salt and pepper.
Fold in sautéed mushrooms, goat cheese, and green onions.
