These colorful, protein-packed egg white bites are the perfect grab-and-go breakfast or snack. Packed with veggies, creamy cottage cheese, and tangy feta, they’re light yet satisfying—and only take minutes to prep!
Ingredients
4 cups liquid egg whites
1 cup low-fat cottage cheese
¾ cup bell pepper, diced
¾ cup spinach, chopped
3 tbsp feta cheese, crumbled
Salt & pepper to taste
Cooking spray
Instructions
Preheat oven to 350°F (175°C). Spray a muffin tin with cooking spray.
In a blender, pulse egg whites and cottage cheese until smooth.
Stir in bell pepper, spinach, feta, salt, and pepper.
Pour mixture into muffin cups, filling ¾ full.
Bake 25–30 mins until set and lightly golden. Cool before removing.
