These Espresso Chocolate Chip Cottage Cheese Muffins are a protein-packed twist on classic muffins. - 2 large eggs
- ½ cup milk (dairy or non-dairy)
- ⅓ cup coconut oil or melted butter
- ½ cup brown sugar or coconut sugar
- 2 teaspoons instant espresso powder
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour (or half whole wheat flour)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup mini chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease.
- In a blender or food processor, blend cottage cheese, eggs, milk, coconut oil, sugar, espresso powder, and vanilla until smooth.
- In a large bowl, whisk flour, baking powder, baking soda, and salt.
- Pour wet mixture into dry ingredients and stir until just combined. Fold in chocolate chips.
- Divide batter evenly among muffin cups, filling each about ¾ full.
- Bake 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool for 5 minutes in the tin, then transfer to a wire rack. Serve warm or at room temperature.
Notes
- Use dark chocolate chips for a richer mocha flavor.
- Substitute Greek yogurt for cottage cheese if preferred.
- Add chopped nuts for extra crunch.
