- 4–5 ripe tomatoes, sliced and drained on paper towels

- ½ cup shredded mozzarella or Gruyère
- 1 egg
- 1 tsp fresh thyme or ½ tsp dried thyme
- Salt and black pepper to taste
- 1 tbsp olive oil (optional, for brushing)
Instructions
- Preheat oven to 375°F (190°C).
- Make the crust: In a bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Add ice water, 1 tablespoon at a time, mixing until dough just comes together.
- Shape dough into a disk, wrap in plastic, and chill for at least 30 minutes.
- Roll out dough on a floured surface to fit a 9-inch tart pan or pie dish.
- Transfer dough to pan, trim edges, and prick the bottom with a fork.
- Blind bake crust for 15 minutes, using pie weights or dried beans to prevent puffing.
- Remove weights and bake for another 5 minutes until lightly golden.
- In a bowl, whisk egg with ricotta/goat cheese, shredded mozzarella/Gruyère, thyme, salt, and pepper.
- Spread cheese mixture evenly over the baked crust.
- Arrange sliced tomatoes on top, slightly overlapping.
- Optional: drizzle olive oil over tomatoes and season with additional salt and pepper.
- Bake tart for 25-30 minutes until cheese is set and tomatoes are roasted.
- Let cool slightly before slicing and serving.
