Ingredients
2 large cucumbers, peeled and chopped
1 cup plain Greek yogurt
1 tbsp fresh lemon juice
1 tbsp olive oil
2 tbsp fresh mint leaves
1 garlic clove (optional)
Salt and pepper, to taste
Optional: cucumber ribbons, mint sprigs for garnish
Instructions
Add cucumber, Greek yogurt, lemon juice, olive oil, mint, and garlic (if using) to a blender.
Blend until smooth and creamy. Season with salt and pepper.
Chill in the fridge or freeze briefly for a frosty finish.
