Ingredients
8 oz ground beef
1 cup broccoli florets, chopped
1 cup cooked quinoa
3 garlic cloves, minced
1½ tbsp tamari sauce
2 spring onions, chopped
1 carrot, chopped
1 tbsp olive oil

1 cup chopped spinach
2 tbsp chopped cilantro
Instructions
Heat olive oil in a large skillet over medium heat.
Add ground beef and cook until browned, breaking it up as it cooks.
Stir in garlic, carrots, and broccoli. Cook for 4–5 minutes until vegetables are just tender.
Add quinoa, tamari sauce, and spring onions. Stir-fry everything together for 3–4 minutes.
Mix in spinach and red pepper if using; cook until spinach wilts.
Sprinkle with cilantro before serving.
