Ingredients
1 lb ground turkey
2 medium sweet potatoes, peeled and diced
1 tbsp olive oil
1 small onion, diced
1 bell pepper, diced (any color)
2 garlic cloves, minced
1 tsp paprika
½ tsp cumin
½ tsp chili powder
Salt and pepper to taste
½ cup low-sodium chicken broth or water (as needed)
Optional: fresh parsley or cilantro for garnish
Instructions
Heat olive oil in a large skillet over medium heat. Add sweet potatoes and cook for 6–8 minutes, stirring occasionally. Add a splash of broth or water and cover to steam if needed.
Push sweet potatoes to one side. Add onion, bell pepper, and garlic. Sauté for 2–3 minutes until softened.
Add ground turkey, breaking it up as it cooks. Season with paprika, cumin, chili powder, salt, and pepper.
Stir everything together and cook until turkey is fully cooked and sweet potatoes are tender.
Garnish with fresh herbs and serve hot.
