Ingredients
6 large eggs
½ cup bell peppers, diced
½ cup spinach, chopped
¼ cup onion, finely chopped
¼ cup shredded cheese (optional)
Salt & pepper to taste
Olive oil or spray for greasing muffin tin
Instructions
Preheat oven to 375°F (190°C). Lightly grease a muffin tin.
In a bowl, whisk eggs with salt and pepper.
Stir in chopped veggies and cheese if using.
Pour egg mixture evenly into muffin cups, filling about ¾ full.
Bake for 15–18 minutes or until set and golden.
Let cool, then store in the fridge for up to 5 days. Reheat and enjoy on the go!
