Ingredients
For the Breakfast Pizza:
1 large flour tortilla (low-carb or gluten-free if preferred)
3 tbsp shredded cheese (cheddar, mozzarella, or blend)
⅓ cup cooked ground sausage, turkey sausage, or bacon
2 large eggs, scrambled
2 tbsp cottage cheesy sauce (see below)
Salt and pepper to taste
Optional: diced bell peppers, onions, tomatoes, salsa
Garnish: chopped parsley or chives
Cottage Cheesy Sauce:
½ cup cottage cheese (regular or low fat)
1 tbsp nutritional yeast
Instructions
Make cheesy sauce: Blend cottage cheese and nutritional yeast until smooth. Set aside.
Prepare tortilla base: Lightly toast tortilla in a skillet or oven until crisp.
Assemble: Spread a layer of cheesy sauce on tortilla. Top with scrambled eggs, sausage, shredded cheese, and optional toppings.
Melt & finish: Return to skillet or bake at 375°F (190°C) for 5–7 mins until cheese is melted and edges are golden.
Garnish & serve: Sprinkle with herbs and enjoy hot!
