Ingredients
8 medium sweet potatoes, peeled and cubed
4 tablespoons olive oil

Instructions
Preheat oven to 400°F (200°C). Line two large baking sheets with parchment paper.
In a large bowl, toss sweet potato cubes with olive oil, honey, cinnamon, salt, and optional spices until evenly coated.
