Ingredients
1 cup cooked brown rice pasta
1/2 zucchini, sautéed or roasted
1/4 cup sun-dried tomatoes
2 tbsp Trader Joe’s kale pesto (or any kale pesto)
1/2 cup cooked chicken breast, shredded or chopped
1/4 cup cherry tomatoes, halved
1/2 cup fresh spinach
Fresh basil leaves for garnish
Instructions
Cook pasta according to package instructions, then drain and set aside.
In a skillet, sauté zucchini and spinach until tender.
Combine pasta, chicken, zucchini, spinach, sun-dried tomatoes, and cherry tomatoes in a large bowl.
Stir in kale pesto until everything is well coated.
Top with fresh basil and serve warm or chilled!
