1 medium zucchini, peeled and diced

1 tbsp butter or coconut oil

1 tsp cinnamon

1 tsp lemon juice

12 tsp erythritol or monk fruit sweetener

For the Chia Pudding:

1/4 cup chia seeds

1 cup unsweetened almond milk

1/2 tsp vanilla extract

12 tsp keto sweetener

Topping:

Keto whipped cream

Dash of cinnamon for garnish


Instructions

Make the chia pudding: Mix chia seeds, almond milk, vanilla, and sweetener. Let sit for 10 minutes, stir again, then refrigerate for 1–2 hours or overnight.
