Description

Bright, cozy, and full of feel-good ingredients—this Lemon Chicken Orzo Soup is a comforting bowl with a refreshing citrus twist. Tender chicken, silky orzo, and veggies simmer in a flavorful broth that soothes and satisfies in every spoonful.

 


Ingredients

2 sticks celery, finely chopped

2 medium carrots, peeled & finely chopped

½ medium onion, chopped

1 tbsp butter

1 tbsp olive oil

3 cloves garlic, minced

2 tbsp flour

6 cups chicken broth

¼ tsp Italian seasoning

lbs uncooked chicken breasts

1 cup uncooked orzo

1 tbsp lemon juice (or to taste)

1 tbsp fresh parsley, chopped (or to taste)

Salt & pepper to taste


Instructions

In a large pot, heat butter and olive oil over medium heat. Add celery, carrots, and onion. Sauté for 5–7 minutes until softened.

 

Stir in garlic and cook for 1 minute. Sprinkle in flour and cook for another minute, stirring constantly.

 

Slowly pour in chicken broth while stirring to combine. Add Italian seasoning and chicken breasts.

 

Bring to a boil, then reduce heat and simmer for 15–20 minutes or until chicken is cooked through.

 

Remove chicken, shred with forks, and return to pot.

 

Stir in orzo and cook uncovered for 8–10 minutes until tender.

 

Add lemon juice and parsley. Season with salt and pepper to taste. Serve warm.
