- 8 large potatoes, scrubbed and baked or cubed
- 16 bacon slices, cooked and crumbled
- 8 tbsp unsalted butter
- 4 garlic cloves, minced
- ½ cup finely chopped yellow onion
- ⅔ cup all-purpose flour
- 4 cups low-fat milk
- 2 cups half and half
- 4 cups chicken stock
- 2 tsp salt (adjust to taste)
- 1 tsp garlic salt (adjust to taste)
- ~2 cups shredded cheddar cheese
- ~2 cups sour cream
- Chives or green onions, for garnish
Instructions
- Cook and crumble bacon, reserving a bit of bacon fat if desired.
- Melt butter in a large pot over medium heat, then sauté garlic and onion until softened.
- Stir in flour to form a roux; cook 1–2 minutes.
- Slowly whisk in milk and half-and-half until the mixture is smooth and thickening begins.
- Gradually whisk in chicken stock and season with salt and garlic salt.
- Add cubed potatoes and let simmer until heated through and slightly thickened.
- Stir in shredded cheddar and sour cream until melted and creamy.
- Fold in most of the bacon, reserving some for garnish.
- Ladle into bowls and top with reserved bacon and chopped chives or green onions.
Notes
- For extra creaminess, you can blend part of the soup before adding cheese and sour cream.
- You can bake and cube potatoes or peel and cube for faster prep.
- Adjust thickness by reducing stock or increasing milk/half-and-half.
