- ½ cup breadcrumbs
- 1 egg
- ¼ cup milk
- ½ small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 2 tbsp ketchup (plus more for topping)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
- In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, ketchup, salt, pepper, and thyme. Mix until just combined.
- Divide the mixture evenly into the muffin tin, filling each cup about ¾ full.
- Top each mini meatloaf with a spoonful of ketchup.
- Bake for 20–25 minutes or until internal temperature reaches 160°F (71°C).
- Let rest for 5 minutes before serving.
