- ½ cup pumpkin purée

- 2 tablespoons all-purpose flour
- 2 teaspoons instant espresso powder
- 1 ½ teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- Whipped cream, for topping

Instructions
- Preheat oven to 325°F (160°C). Line a 12-cup muffin tin with paper liners.
- Mix graham cracker crumbs, 3 tablespoons sugar, and melted butter until combined. Press about 1 tablespoon of the mixture into the bottom of each muffin liner.
- In a large bowl, beat cream cheese and ½ cup sugar until smooth and creamy.
- Add pumpkin purée, eggs, sour cream, flour, espresso powder, pumpkin spice, and vanilla. Mix until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 20–22 minutes, until centers are just set. Cool completely in the pan, then refrigerate for at least 2 hours.
- Top with whipped cream and a sprinkle of cinnamon or nutmeg before serving.
Notes
- For extra espresso flavor, dissolve espresso powder in 1 teaspoon hot water before adding to batter.
- Use gingersnap crumbs instead of graham crackers for a spicier crust.
