- 1 lb ground turkey
- 3 medium potatoes, diced
- 1 bell pepper, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp Italian seasoning
- Salt and pepper, to taste
- Optional: chopped parsley, shredded cheese, hot sauce for serving
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until golden and tender. Remove and set aside.
- Add remaining olive oil and sauté onion and bell pepper for 2–3 minutes.
- Add ground turkey and cook until browned, breaking it up as it cooks.
- Stir in garlic, paprika, Italian seasoning, salt, and pepper. Cook for 1 minute.
- Return potatoes to the skillet and mix everything together. Cook for another 2–3 minutes until heated through.
- Garnish with parsley or cheese if desired and serve warm.
