Description
A hearty, creamy one-pot turkey and vegetable stew featuring tender turkey, potatoes, carrots, celery, and aromatic herbs in a comforting broth. Perfect for using up leftover holiday turkey or rotisserie chicken.

- 2 tbsp butter
- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 3 cups diced cooked turkey (or chicken)
- 3 cups chicken or turkey broth
- 2 cups diced potatoes
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt & pepper, to taste
- 1 cup heavy cream
- 2 tbsp all-purpose flour
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- In a large pot, melt the butter over medium heat.
- Add the onion, carrots, and celery. Cook for 5-6 minutes until softened.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add the diced turkey, broth, potatoes, thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce heat to a simmer, cover, and cook for 15-20 minutes until potatoes are tender.
- In a small bowl, whisk the flour with the heavy cream until smooth. Stir into the stew.
- Simmer uncovered for 5-7 minutes until thickened.
- Taste and adjust seasoning as needed. Garnish with fresh parsley if desired.
Notes
- Leftover cooked chicken can be used instead of turkey.
- For a lighter version, use half-and-half or milk instead of heavy cream.
- Add extra vegetables like peas or corn for more color and flavor.
