Ingredients
1 large ripe peach, thinly sliced
1 cup Kodiak Cakes Buttermilk pancake mix (or gluten-free version)
½ tsp ground cinnamon
½ cup Fairlife milk (or any milk of choice)
¼ cup buttermilk (or plain unsweetened kefir)
¼ cup water
1 large egg
1 tbsp butter, melted
½ tsp almond extract (or sub with vanilla)
¼ cup sliced almonds
Instructions
Make Batter: In a bowl, whisk pancake mix, cinnamon, milk, buttermilk, water, egg, melted butter, and almond extract until smooth. Let sit 5 minutes.
Prepare Pan: Heat a non-stick skillet over medium. Lightly grease with butter or spray.
Cook Pancakes: Pour batter onto skillet. Top each pancake with a few peach slices. Cook until bubbles form and edges are set. Flip and cook until golden brown.
Toast Almonds: In a dry pan, lightly toast almonds until golden and fragrant (optional).
Serve: Stack pancakes, top with extra peaches and toasted almonds. Drizzle with syrup or honey if desired.
