Ingredients
2 boneless, skinless chicken breasts
¼ cup pesto (store-bought or homemade)
1 cup couscous
1 cup water or chicken broth
1 tbsp olive oil
Zest and juice of ½ lemon
1 cup cherry tomatoes, halved
1 cup mini mozzarella balls (bocconcini), drained
Salt & pepper, to taste
Instructions
Cook the chicken: Season and grill or pan-cook chicken until done. Slice and toss with pesto while warm.
Make the couscous: Bring water or broth to a boil. Stir in couscous, olive oil, lemon zest, juice, salt, and pepper. Cover and let sit 5 minutes. Fluff with a fork.
Assemble boxes: Divide couscous into containers, add sliced pesto chicken, cherry tomatoes, and mozzarella.
Store: Refrigerate and enjoy cold or slightly warmed.
