- 3 lbs Yukon Gold or russet potatoes, peeled & cubed
- 1 head garlic
- ½ cup unsalted butter, divided
- 1 cup heavy cream or half-and-half
- Salt & pepper, to taste
- Optional: chopped chives or parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.
- Add potatoes and ¼ cup butter to the slow cooker. Cover with water or broth just to submerge.
- Cook on HIGH for 3–4 hours or LOW for 6–7 hours, until potatoes are fork-tender.
- Drain the potatoes, then mash directly in the slow cooker.
- Squeeze roasted garlic cloves into a saucepan with cream and remaining ¼ cup butter. Heat until warm and infused.
- Pour garlic cream mixture over potatoes, mashing until smooth and creamy.
- Season generously with salt and pepper. Garnish with chives or parsley before serving.
Notes
- For extra flavor, cook potatoes in chicken broth instead of water.
- Use a potato masher for rustic texture or a hand mixer for ultra-smooth mash.
- Roast garlic ahead of time and refrigerate for up to 3 days.
- Keep warm in the slow cooker on LOW until ready to serve.
