Ingredients
1 tbsp olive oil
½ cup diced onion
1 lb lean ground beef
5 tsp chili powder, divided
2 tsp ground cumin
Kosher salt & fresh ground black pepper, to taste
1 tsp grated garlic
2 cups peeled, diced sweet potatoes
1 (14.5 oz) can fire-roasted diced tomatoes
4 oz canned diced green chiles
¼ cup water
½ cup shredded cheddar cheese
Fresh cilantro (optional, for garnish)
Instructions
In a large skillet, heat olive oil over medium heat. Add onions and cook until soft.
Stir in ground beef, breaking it up as it cooks. Season with 3 tsp chili powder, cumin, salt, and pepper. Cook until browned.
Add garlic and sweet potatoes. Sauté for 3 minutes.
Stir in remaining chili powder, tomatoes, green chiles, and water.
Cover and simmer for 15–20 minutes, stirring occasionally, until sweet potatoes are tender.
Sprinkle with cheddar cheese, cover briefly to melt.
Garnish with cilantro and serve hot.
